We used Lamberts in one version and Royal Anne in another attempt. Both were very good!

Cherry Clafoutis Recipe
Ingredients
- 20 oz fresh sweet cherries stemmed and pitted (this is approximately 2 full cups)
- 2 tablespoons butter melted
- 4 each eggs
- 1 cup milk
- 3/4 cup flour
- 1/4 teaspoon salt
- 1/2 cup sugar
- 1/2 teaspoon almond extract
- 1/2 teaspoon vanilla extract
For Dusting
- 1/4 cup powdered sugar
Instructions
- Preheat the oven to 350F. Grease a round 10 inch baking dish with butter. Dust with about 2 tbsp of sugar
- Arrange the cherries in a single layer; set dish aside until you prepare the batter.
- Mix eggs with remaining sugar and salt. Stir in the flour. Add milk, vanilla extract, and mix well, until well blended.
- Add melted butter and stir to combine. The result will be similar to a crepes mixture.
- Pour the mixture over the cherries.
- Bake for about 40 - 45 minutes until puffed and golden brown.
Serving the Dish
- Sprinkle with powdered sugar before serving. Can be served warm, or chilled. Also works well with a little ice cream.
